St Luke’s Coffee Hour ~ Recipe of the Week
Blueberry Cornbread Muffins
Prep Time: 15 mins
Cook Time: 15 mins
Servings: 10
INGREDIENTS
1 cup corn meal
1 cup flour
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
1 cup milk
1/3 cup vegetable oil
1 large egg
1 bag of frozen blueberries
DIRECTIONS
Preheat oven to 400 degrees.
Combine all dry ingredients in a large bowl.
Combine wet ingredients in small bowl.
Pour wet into dry and stir until just blended. Add blueberries here. They’re going to turn the whole batter purple. Just go with it.
Pour into greased muffin tin, 2/3 full.
Bake for 15 minutes.
Enjoy warm with butter. Lots of butter. Diets and quarantine don’t mix.
